It is done to give the locals a product they are familiar with, and to adjust the menu to local tastes. Most American companies, in one way or another adjust their product line to the local tastes when they expand overseas. It' not just food companies. Even tire companies do it. Just because it's an American company, that does not imply in any way that the product is necessarily American. It once implied, but no longer does, that the money generated would find it's way back to the US in some way.
It was war and it belonged to a union army commander turned confederate. What exactly did you expect would happen? The U.S government would plant daisies and mow the lawn?

I completely agree. I played as Jane Shepherd as well and with the voice acting, character animations, and the story, I really felt connected to the character and I'm glad we can bring our character to ME2.?
